Hog Wings
Ingredients:
8 boneless, 1 inch thick pork chops, fat trimmed, cut in thirds lengthwise
16 slices of bacon
1 onion
32 toothpicks
Rub:
1 tbsp pepper
1 tbsp salt
1/2 tbsp garlic powder
1/2 tbsp cumin
1/4 tsp cayenne pepper

Directions:
Rub pork with rub and wrap with one slice of bacon and secure with toothpicks.
Smoke at 225 degrees for about 90 minutes or until internal temperature reaches 145 degrees.
Brush with Bourbon Glaze and broil for about 10 minutes.
