Ingredients
4lbs of frozen corn
2 cans of Rotel, drained
1 sweet or red onion, diced
1 bunch of green onions/scallions, diced, bottoms (mixed in salad) and tops (saved for garnish) separated
8oz of Cojita cheese, 1/4 reserved for the top
1 tbsp Chili Powder, plus extra to sprinkle for garnish
Zest and juice of 2 limes
1 lb of bacon, diced, cooked and drained
1 bunch of cilantro, diced
salt and pepper to taste
2-3 tbsp canola oil
2-3 cloves of garlic, minced
7 tbsp of mayonnaise
Thaw corn and drain, coat with oil and spread out single layer on 2 sheet pans (use foil or spray) broil in oven until golden brown, then cool.
Combine all ingredients in mixing bowl day of (can dice/cut day before), top with garnish and serve at room temp or cold.
